The classic combo of sausage and peppers is one of the best ways to showcases our Spicy Italian Sausage recipe, made with Longève Original Plant-Based Protein Crumbles. There’s just something so comforting and satisfying about tender, flavorful plant-based sausages bathed in a bright tomato sauce with plenty of sweet bell peppers and onions. Served with pasta, polenta, or piled into a soft Italian roll - any way you eat it, you’re sure to enjoy it. Mangia!
3 small bell peppers (a mix of red, green and yellow is nice), sliced into strips
1 small onion, sliced
2 - 3 cloves garlic, chopped
½ tsp. Italian seasoning
½ tsp. salt
¼ tsp. pepper
1 14-oz can crushed tomatoes
Fresh basil, for garnish
Prepare and cook Longève Spicy Italian Sausage according to recipe directions. Cut cooked sausage into thick slices. Heat two tablespoons olive oil in a heavy, non-stick or cast-iron skillet over medium heat and add sliced sausage, cut-side down. Cook for four to five minutes, flipping pieces once, until golden brown on both sides. Remove sausage from pan and set aside.
Wipe out skillet and place over high heat. Add peppers and onion and spread out into an even layer. Let cook for one to two minutes before stirring. Cook for an additional two or three minutes until peppers are beginning to char and soften.
Add one tablespoon olive oil, garlic, Italian seasoning, salt, pepper and crushed tomatoes and mix well. Bring mixture to the boil, turn heat to low, and simmer for five minutes to finish cooking peppers and onions, and to allow flavors to meld.
Turn off the heat and fold in the browned sausage. Roughly chop or tear basil leaves and stir in to finish.
Serve over pasta, soft polenta or as a hearty sandwich.
