Ingredients

  • 1 ½ cup (1 3-oz. bag) Longève Zesty Taco Plant-Based Protein Crumbles, dry
  • ¾ cup hot water
  • 1 Tbsp. vegetable or olive oil


  • Salt & freshly ground pepper, to taste
  • ½ cup tomato sauce
  • 1/3 cup vegetable broth
  • 6-8 corn tortillas, soft or crunchy


  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce or cabbage*


INSTRUCTIONS

  1. Rehydrate Zesty Taco Longève Crumbles in ¾ cup hot water. Reserve seasoning packet.
  2. Heat oil in a 12-inch nonstick skillet over medium-high heat.
  3. Add Crumbles, salt and pepper, and taco seasoning packet to skillet and sauté for three minutes.
  4. Pour vegetable broth and tomato sauce into the skillet and stir well. Reduce heat to medium-low, and simmer until sauce has reduced and thickened, about 3 to 5 minutes.
  5. Spoon filling into soft or crunchy corn tortillas and top with cheese, tomatoes and lettuce as desired.
