It's got a long-ish title, but this french toast recipe is super simple and perfectly sweet. We originally developed it for Mother's Day (it's a breakfast-in-bed home run, obviously) but let's be real...you don't need a special holiday to make this for your mom (or yourself). If you're more of a pancake or waffle person, our cinnamon crunch breadcrumb topping works great on those too.

INGREDIENTS

French Toast:

  • 4-6 slices of brioche or sourdough bread (any thicker bread of your choice works) 
  • 4 eggs 
  • 1 tsp. vanilla extract 
  • ¼ cup Milk (plant-based or regular works) 
  • Butter or olive oil, for greasing the pan 
  • Fresh berries (we like blueberries and strawberries)

Cinnamon Crunch Topping:

  • ½ cup brown sugar 
  • ½ tsp. Cinnamon 
  • ¼ cup bread(less) crumbs (Original or Panko)
  • 4 Tbsp. butter 

INSTRUCTIONS

    • Whisk together eggs, milk, and vanilla extract. Place mixture in a low, flat baking dish. 
    • Heat a large skillet on medium heat and grease with butter or oil.
    • Dip one piece of bread into the egg mixture and coat both sides then place into hot pan. Repeat until egg mixture is used up. 
    • Prepare the cinnamon crunch topping while the bread is frying. Place a small skillet on low heat and add butter. Once the butter has melted, add in Original or Panko bread(less) crumbs. Once the breadcrumbs are toasted, add the brown sugar and cinnamon.
    • Plate the French toast. Top with your cinnamon crunch topping and fresh berries.
