This delicious vegan twist on chicken parm was created by our social media partner Natalie Matthews (@fitveganchef). By swapping out the chicken with baked tofu, she made a recipe that's nutritious, delicious, and vegan!

  • 1 tsp. salt
  • 2 blocks extra-firm tofu
  • ½ cup gluten-free flour 
  • ½ tsp. black pepper
  • 2 tsp. garlic powder
  • 2 Tbsp. flaxseed meal
  • ½ cup water or plant-based milk 
  • 1 cup Longève Original Breadless Crumbs 
  • ¼ cup vegan parmesan cheese, finely grated 
  • 1 Tbsp. dry Italian spice blend
  • Marinara sauce
  • Vegan shredded mozzarella cheese
  • Basil leaves


  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Using a kitchen towel, dry and press tofu for 7 minutes. Place something heavy, like a cutting board, on top to help press out the water. While tofu is drying, prepare the dipping stations.
  3. Set up three mixing bowls. Bowl one will have the flour mixture: ½ cup Gluten-free flour, 2 tsp. garlic powder, 1 tsp. salt, ½ tsp. black pepper.
  4. In a different mixing bowl, stir together the flax egg mix, which is 2 Tbsp. flax meal and 1/2 cup of water or plant-based milk.
  5. To a third mixing bowl, add 1 cup of Longève Breadless Crumbs, ¼ cup of finely grated vegan parmesan cheese, and 1 Tbsp. of dry Italian spice blend.
  6. Once the tofu is dry, cut each of the tofu blocks into 4 or 5 equal portions.
  7. Dip one slice at a time starting with bowl one (flour mixture), bowl two (flax egg), and finishing with bowl three (the breading). Place breaded tofu onto the lined baking sheet. Continue the process until all the tofu is used.
  8. Bake for 12 minutes, flip and continue baking for 10 minutes or until golden brown.
  9. Add marinara sauce and cheese to each of the tofu slices and bake an additional 5 minutes or until the cheese is melted. Top with basil leaves and serve!

*FACTS ABOUT FLAX: Flaxseed Meal is made from ground flaxseed, and it’s a great source of fiber and Omega-3 essential fatty acids. It can be used to thicken smoothies, bulk up burgers and baked goods or as a vegan egg replacer when mixed with water. You can find it at most grocery stores in the baking aisle.
