Let’s talk about comfort food. We all have our favorite, go-to meal that can make a bad day just a little bit better. We’ve taken some of our favorite ideas and made them plant-based…without sacrificing any of the flavor or richness that makes comfort food comforting.
Let’s start with the obvious. Is there anything better than a big bowl of creamy, cheesy goodness? In our humble opinion, baked is best because of that golden, buttery crunchy topping. Instead of potato chips or traditional breadcrumbs, we like our gluten-free, plant-based Breadless Crumbs. Simply toss with olive oil or butter and sprinkle over mac n’ cheese before popping it in the oven. The 7 grams of protein per serving is just an added bonus.
Meatballs drenched in marinara, topped with melting mozzarella and parmesan (vegan or dairy) on a warm, crusty sub roll…it’s enough to make your mouth water. Simmer our protein-packed Plant-based Meatballs (recipe here) in your favorite marina sauce, jarred or homemade, then add to buttered sub rolls. Sprinkle mozzarella on top and bake them in a 400° oven until cheese melts. Top with grated parmesan.
